Charred Island Wings
- 3 lbs of wingettes
- Fresh Pineapple diced
- Fresh Papaya diced
- Fresh Mango diced
- 3 Fresh Jalapenos diced fine
- Fresh Cilantro
- 1 cup Pineapple Juice
- Fresh Red Bell Pepper
- 1 cups Soy Sauce
- 1/2 cup Molasses
- 2 cups Ketchup
- 4 tsp Allspice
- 2 tsp Cayenne pepper
- 2 tsp Crushed red peppers
- 1/2 tsp Cinnamon
- 4 tsp Brown sugar
- 1 tsp Salt
- 2 tsp White sugar
- 1-2 Habaneros optional
Combine all herbs together with sugars to create a rub. Set aside 2 Tsp of this rub for seasoning of sauce.
Take rub and coat Chicken well, rubbing in to massage the flavors into the chicken. Place in refrigerator for 1/2 hour.
Take 2 tsp of the mixture and combine in a bowl with the ketchup, pineapple juice, soy sauce, molasses, and 1/2 of each of the fresh fruit. Pour into blender and blend together on puree until mixture is well combined. (Add habaneros to mixture while blending to turn up, the heat) *** These are the hottest peppers available. Be careful and use gloves.***
Place wingettes in the oven for about 15 minutes on a sheet pan on 375 degree. Then Pour 3/4 of the mixture over the wings and toss in a large bowl. place the wingettes over open flame on the grill and char them well on all sidesÊbut don't burn them. Be careful, there is a fine line between the two.
Place on aÊplatter and pour remaining mixture over the wingettes. Garnish with diced fruit and cilantro and jalapeno slices.
